Michael began his culinary journey when he was 17 years old working at a classic Italian piz-zeria on the lakeshore in Toronto. Learning very quickly under the family-owned Calabrian team, Michael honed his pizza making skills before moving to the city to pursue a career in the culinary arts.
After 5 years of working in some of the city’s busiest kitchens, Michael found his way back to pizza, assuming the Regional Chef di Cucina Role at Pizzeria Libretto for the past 6 years. This opportunity provided working trips to Rome and Naples, where Michael absorbed the tricks and secrets of some of Italy’s top Pizzerias and bakery’s.
Chef Michael is ecstatic to pass this information onto his students as he assumed the role of lead Trainer at the Faema Culinary Academy in 2018, working with industry professionals, culinary masters, and home pizzaiolos on a daily basis.
Giovanni is a decorated and award winning pizza master that specializes in the fine art of creating the classic pizza through the process of extended fermentation of the dough. He also specializes in Pizza Metro (Al Taglio/Romana), and pizza decorating techniques.
His experience as competitor in pizza making events, and as a guest judge for various pizza com-petitions have taken him to France, England, Switzerland, Spain, Germany, and the United States. Giovanni brings his passion to teach pizza and his love for pizza wherever he goes.
In addition to his masterful pizza making skill set, Giovanni is the proud owner of Pizzeria Fantasy in Oristano, Italy. He is also the president of Mondo Pizza Academy, an Italian academy that is dedicated to the fine art of pizza making (Accademia Della Pizza S. Scuole Italiana Pizzaioli, PGM, API).
